Cherry Mojito Recipe (makes 2)
Adapted from Cookie and Kate
- 1/2 c cherries
- Small handful of fresh mint leaves (about 1/4 cup)
- Juice from 1 lime
- 1 tbsp turbinado sugar
- 3 oz white rum
- 2 c club soda
- Combine the mint leaves, cherries, lime juice and sugar in a mixing glass or bowl and muddle thoroughly.
- Stir in the rum.
- Layer the mojito mixture, ice, and club soda into two tall glasses and swirl to combine. (The layering isn’t strictly necessary, but it will make them look pretty!)
