Jiffy Cornbread Cookies

Cornbread Cookies | With Lovely,

If you love cornbread (and really, who doesn’t?), you must must must make these cookies! They’re fluffy and a little chewy and every bit as tasty as you’d imagine.

The best part? They give you a great excuse to up your honey butter (cream cheese frosting) to cornbread (cookie) ratio. Yum!

Ingredients:

Cornbread Cookies

  • 6 Tbsp butter, at room temperature
  • 2 Tbsp sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 box Jiffy corn muffin mix

Honey Butter Cream Cheese Frosting

  • 1/2 c butter, at room temperature
  • 6 Tbsp cream cheese
  • 1/2 c powdered sugar
  • 1/4 c honey

Directions:

Adapted from Life’s Too Short to Skip Dessert

  1. Mix butter and sugar in a stand mixer at medium speed until light and fluffy.
  2. Add egg and vanilla and mix until combined. 
  3. Add the Jiffy corn muffin mix and mix until fully incorporated.
  4. Refrigerate dough at least 30 minutes.
  5. Heat oven to 350°, place tablespoon-sized balls of batter onto a baking sheet lined with parchment paper, and bake for 10 minutes.

Honey Butter Cream Cheese Frosting

  1. Whip all ingredients together.
  2. Spread on cooled cookies.
  3. Enjoy!

These are also great with a bit of candied bacon or blackberry preserves on top!

    I really liked these, I had the mix and didn’t know what to do with it ‘cuz I didn’t want more cornbread, these cookies were great. The only thing is that I added 1/4 a cup of sugar to it, after that I shared them with everyone! Thx for the great recipe

      Hi Heather! I’m sorry I didn’t record the yield, but I believe it made about 12 large cookies, or you could probably make 24 small cookies.
